All you have to do is love the charming, independent and rebellious spirit of Texas. Balconies Distilling is located in Waco – about halfway between Dallas and Austin. Texas is a big state, and they like everything; big steaks, big trucks, big hats, and big flavors. Balconies is still a small distillery (thank God!), But it’s full of big ideas. Balcone LOVES to experiment. And they have been tinkering with Single Malt Whisky for a while — yes, we said Texas Single Malt.
Well, in addition to the Balcones 1 Single Malt in their core range, they have the Balcones Mirador as an annual release. It starts with a mixture of single malt mesh made from the same pot. But it’s aged a little longer in second-fill casks (from two to five years) and bottled a tad bit stronger (54.8% ABV), yielding a smoother flavor profile without losing a step of flavor.
‘Mirador’ may be a second fill barrel malt profile created from whiskies starting from around 2 years to nearly 5 years in age. Since it occurs in used papayas all ages, oak is less prominent. It’s not as dark as most balconies. Not surprisingly, the nose provides more malt than wood, which is easily absorbed into bourbon whiskey. But, after all, it’s the only malt. There are tips for garden fruits, especially pears and apples; The spices add depth while the bottom is covered with something fresh. Pure, tender and round, dried fruits are finished with delicate roughness, before doubling the oak shavings with fruit muesli and toasted grain sweetness. Less ripe and green notes of pear, green apple skins and flower stems, honey, brown sugar and soft suede leather notes open up to the honeycomb and fallen leaves before they appear.
The aroma of green fruits and light herbs suggests green tea and honey with hints of fennel and lemongrass. As it breathes, the impression of a light fruit syrup is concentrated and mixed with soft spice notes to make an apple pie with lemon yogurt, fruit salad with marshmallows and pecans, and even accidental garnish of cucumber.
